Ingredients

INGREDIENTS FOR THE DOUGH:

75 g rice flour

30 g cornstarch

30 g coconut blossom sugar

1 pinch of salt

1 teaspoon (3 g) psyllium husks + 60 ml water

15 ml coconut oil

5g dry yeast + 1 tsp (5g) coconut blossom sugar + 25ml plant-based milk

FILLING:

30 ml coconut oil

1 level teaspoon cinnamon

30 g coconut blossom sugar

1 apple

1 handful of chopped pecans / walnuts

Preheat the oven to 35 degrees top/bottom heat.

Mix the psyllium husks with water in a small bowl and set aside to swell.

To prepare the yeast, first heat the 50ml milk slightly, pour it into a small bowl or cup and add the dry yeast and coconut blossom sugar. Leave to stand for about 10 minutes.

Mix all dry ingredients together and melt the coconut oil.

Add the yeast mixture and the psyllium husks together with the coconut oil to the dry ingredients and process into a homogeneous dough.

Form the dough into a ball and let it rise in the oven at 35 degrees for about 1 hour.

FOR THE FILLING:

Cut an apple into small pieces and mix it with the remaining ingredients in a bowl.

Take the dough out of the oven and roll it out. Now preheat the oven to 180 degrees.

Spread the filling on the rolled out dough and carefully roll it up from the longer side. Cut into 8 pieces and place in a mold.

Bake for about 30 minutes.
