Ingredients
200 g almond flour
60 g lei seeds, approx. 160g water
50 g coconut flakes
3 bananas
1 teaspoon vanilla powder
2 teaspoons baking powder
120 g maple syrup
50 g melted coconut oil
1 pinch of salt
preparation
Preheat the oven to 180°C and line a loaf tin with baking paper.
Put all the dry ingredients in a bowl and mix. Mash two bananas and add them to the dry ingredients with the remaining liquid ingredients and mix.
Spread everything evenly into the loaf pan, halve the third banana and place it on top. Bake in the oven for about 40 minutes.
It's best to prick it with a fork every now and then and if it comes out clean and nothing sticks, the banana bread is ready. Allow to cool completely.
