Ingredients

200 g chickpea flour

450 ml plant-based drink of your choice

60 g apple puree

3-4 tablespoons coconut blossom sugar

2 teaspoons baking powder

1 teaspoon cinnamon

1 pinch of salt

coconut oil for greasing

Toppings (optional): Fresh strawberries, vanilla coconut yoghurt, maple syrup or coconut blossom syrup

Put all ingredients except the coconut oil and toppings into a mixing bowl and stir with a whisk until the mixture is homogeneous and no lumps of flour are visible.

Preheat the waffle iron and grease it with a little coconut oil.

Bake the dough into about 8 waffles and let them steam briefly on an oven rack before serving.

Top with a dollop of vanilla coconut yoghurt, fresh strawberries and a drizzle of maple syrup or coconut blossom syrup.
