Ingredients

150g oat flour

100g ground almonds

70g potato starch

3 teaspoons of baking powder

40g coconut blossom sugar

2 tablespoons maple syrup

3 tablespoons cashew/almond butter

200ml sparkling water

50ml oat milk

1 teaspoon apple cider vinegar

2 tablespoons cocoa powder

2 extra tablespoons oat milk

75gDark Chocolate Chocolinis

preparation

Preheat the oven to 180 degrees.

Mix the wet ingredients into a creamy mixture.

Mix the dry ingredients (except the cocoa powder) and add them to the wet ingredients and mix into a creamy dough.

Put half of the dough into a greased springform pan.

To the other half, add the cocoa powder and 2 tablespoons of oat milk and stir until well mixed.

Now spread the dark dough over the light dough and marble it with a fork.

Bake the cake for about 20 - 30 minutes at 180° C in a preheated oven.

Let the cake cool, remove it from the pan and top it with melted chocolinis.

My version of the classic is of course vegan, gluten-free and contains no refined sugar! The cake is incredibly fluffy, moist and delicious - I'm sure no one will notice that it's vegan.
You can cover the cake with a chocolate glaze to make it even more chocolatey.
I love making this recipe for birthdays, family celebrations or other special occasions, and it also makes a great picnic gift!
