Ingredients

120 g oat flour

200 ml oat milk

1 ripe banana

1/2 teaspoon baking powder (can be omitted)

Oil for frying (I use baby food oil or coconut oil)

Put the oat milk and oat flour in a bowl and mix well.

Add baking powder and banana to the remaining ingredients and mix into a smooth dough.

Let it rest for about 5 minutes. In the meantime, heat some oil in the pan.

For each pancake, add 1-2 tablespoons of batter to the pan and fry for a few minutes on each side.

About Quick & Gluten-Free Banana Pancakes

These BANANA PANCAKES are one of my absolute favorite recipes - I make them at least twice a week.
Not only are the pancakes super quick to prepare and only contain a few ingredients, but they are also a hit with the whole family! As always, the pancakes are vegan, gluten-free and contain no refined sugar.
They are perfect for breakfast on the weekend or as meal prep for busier days. I love the combination with our Hazelnut Dark Chocolate Spread and fresh fruit, but of course you can top them with whatever you like!
